Baked Salmon with Mustard Herb Crust

Ingredients:

  • I1 1/2 lb. salmon filet, cut into 4 filets
  • I2 tbsp. fresh parsley, finely chopped
  • I2 tbsp. extra light olive oil
  • I2 tbsp. fresh lemon juice
  • I3 garlic cloves, minced, pressed or grated
  • I1/2 tbsp. Dijon mustard
  • I1/2 tsp. fine sea salt
  • I1/8 tsp. black pepper, freshly cracked
  • I1/2 lemon, sliced into four rings for garnish

Directions:

  1. Preheat oven to 450 F and line a rimmed baking sheet with a silicone liner, parchment or foil.
  2. Arrange salmon fillets on the prepared baking sheet, skin side down.
  3. In a small bowl, add the marinade ingredients: parsley, garlic, oil, lemon juice, Dijon mustard, salt and pepper. Stir to combine.
  4. Generously spread the marinade, brushing over the top and sides of the salmon and then top each piece with a slice of lemon.
  5. Bake uncovered at 450 F for 12 to 15 minutes or until just cooked through, flaky and the salmon reaches an internal temperature of 145 F at the thickest portion on an instant-read thermometer. Do not overcook.
