Baked Apple Oatmeal

Ingredients:

  • 2 cups old-fashioned rolled oats
  • 1½ cups almond milk
  • 1 cup diced apples
  • ¼ cup chopped pecans
  • 2 tbsp. maple syrup
  • 1 tbsp. olive oil
  • 1 beaten egg
  • 1 tsp. ground cinnamon
  • ½ tsp. ground ginger
  • ¼ tsp. ground nutmeg

Directions:

  1. Preheat the oven to 350 F and prepare a greased 8-by-8-inch, oven-safe baking dish.
  2. In a large mixing bowl, add all of the ingredients. Stir until combined. Pour the batter into the prepared 8-by-8-inch pan.
  3. Bake the oatmeal uncovered for 35-40 minutes at 350 F, until the top is golden brown and the milk is completely absorbed.
  4. Store in an airtight container in the refrigerator for up to a week.
