Ingredients:
- 2 cups old-fashioned rolled oats
- 1½ cups almond milk
- 1 cup diced apples
- ¼ cup chopped pecans
- 2 tbsp. maple syrup
- 1 tbsp. olive oil
- 1 beaten egg
- 1 tsp. ground cinnamon
- ½ tsp. ground ginger
- ¼ tsp. ground nutmeg
Directions:
- Preheat the oven to 350 F and prepare a greased 8-by-8-inch, oven-safe baking dish.
- In a large mixing bowl, add all of the ingredients. Stir until combined. Pour the batter into the prepared 8-by-8-inch pan.
- Bake the oatmeal uncovered for 35-40 minutes at 350 F, until the top is golden brown and the milk is completely absorbed.
- Store in an airtight container in the refrigerator for up to a week.
