Split Pea with Ham
Yield: 6 to 8 servings

Ingredients:

  • 1 ham bone with some meat
  • 2½ cups split peas
  • 5 stalks celery, diced
  • 4 carrots, diced
  • ½ large sweet onion, diced
  • 1 cup diced ham
  • 1 tbsp. kosher salt
  • 2 tsp. black pepper
  • 2 tsp. dried thyme
  • 1 bay leaf
  • 4 cups water
  • 4 cups chicken broth
  • For garnish parsley

Directions:

  1. Place ham bone, split peas, celery, carrots, onion, seasonings and bay leaf into a large pot; pour in water and broth.
  2. Bring mixture to a boil and skim off any foam with a spoon.
  3. Reduce heat and place a lid on the pot, slightly ajar to allow some evaporation. Simmer, stirring occasionally, until split peas are tender and soup is thick, about 3 hours.
  4. Remove ham bone from soup. Remove any meat from bone back into soup.
  5. Serve with croutons and parsley.
