Forbidden Rice Salad

Great with burgers!

Ingredients:

  • 1 cup black rice, cooked and cooled
  • 1 cup shelled edamame, thawed if frozen
  • 1/2 red bell pepper, seeded and chopped
  • 1/2 yellow bell pepper, seeded and chopped
  • 2 clementines, cut into small pieces
  • 2 green onions, both white and green parts, sliced
  • 1/4 cup chopped fresh cilantro
  • for garnish sesame seeds

Ingredients for dressing:

  • 2 tsp. rice wine vinegar
  • 1 tbsp. orange juice
  • 2 tsp. coconut aminos
  • 2 tsp. maple syrup
  • 1 tsp. grated fresh ginger
  • 1 clove garlic, grated, minced
  • 1 tsp. sesame oil
  • 1/4 cup olive oil

Directions:

  1. Place the black rice in a large serving bowl. Add the edamame, bell pepper, clementines, green onions, and cilantro to the bowl. Set aside.
  2. In a separate small bowl, whisk together all dressing ingredients except olive oil. Add the olive oil in a slow steady stream to bowl, whisking constantly. Add a pinch of salt.
  3. Add the dressing to the salad and toss to combine until the salad is well-coated with the dressing.
  4. Sprinkle with sesame seeds.
