Great with burgers!
Ingredients:
- 1 cup black rice, cooked and cooled
- 1 cup shelled edamame, thawed if frozen
- 1/2 red bell pepper, seeded and chopped
- 1/2 yellow bell pepper, seeded and chopped
- 2 clementines, cut into small pieces
- 2 green onions, both white and green parts, sliced
- 1/4 cup chopped fresh cilantro
- for garnish sesame seeds
Ingredients for dressing:
- 2 tsp. rice wine vinegar
- 1 tbsp. orange juice
- 2 tsp. coconut aminos
- 2 tsp. maple syrup
- 1 tsp. grated fresh ginger
- 1 clove garlic, grated, minced
- 1 tsp. sesame oil
- 1/4 cup olive oil
Directions:
- Place the black rice in a large serving bowl. Add the edamame, bell pepper, clementines, green onions, and cilantro to the bowl. Set aside.
- In a separate small bowl, whisk together all dressing ingredients except olive oil. Add the olive oil in a slow steady stream to bowl, whisking constantly. Add a pinch of salt.
- Add the dressing to the salad and toss to combine until the salad is well-coated with the dressing.
- Sprinkle with sesame seeds.
