Tuna Macaroni Salad

Ingredients:

  • 1 box elbow macaroni
  • 2 small cans tuna, drained
  • 1/2 cup mayonnaise
  • 1 stalk celery, chopped
  • 1/4 cup dill pickles, thinly sliced
  • 2 scallions, thinly sliced
  • 2 tbsp. pickle relish
  • 1 tbsp. Dijon mustard
  • 1 tbsp. fresh lemon juice
  • 1/3 cup fresh flat-leaf parsley, chopped
  • 1/3 cup fresh dill, chopped

Directions:

  1. In a medium pot of salted water, cook macaroni according to package directions. Drain and run under cold water to cool.
  2. Combine tuna, mayonnaise, celery, dill pickles, scallions, pickle relish, mustard, lemon juice, parsley and dill in a bowl. Add macaroni and stir to combine. Season with salt and pepper.
  3. Refrigerate for up to 2 days.
