Kentucky Hot Browns

Ingredients:

  • 2 Tbsp. butter
  • 1/4 cup flour
  • 1 cup heavy cream
  • 1 cup milk
  • 1/4 tsp. salt
  • 1/2 tsp. Worcestershire sauce
  • 1 tsp. Hot sauce
  • 1/4 cup grated sharp white cheddar cheese
  • 3/4 cup Pecorino Romano, divided
  • 8 slices Texas Toast, crusts removed
  • 1 pound turkey, thinly sliced
  • 4 slices tomato
  • 8 strips bacon, cooked and drained

Directions:

  1. Melt butter in a saucepan over medium-low heat.
  2. Add the flour and stir until smooth and bubbly.
  3. Add cream and milk, salt, Worcestershire sauce, hot sauce, cheddar cheese, and 1/2 cup Pecorino Romano. Continue to cook, stirring constantly, until thick and bubbly.
  4. Cut the toast diagonally and place on a baking sheet. Arrange turkey slices on the toast and cover with hot cheese sauce. Top with tomato slices and sprinkle the remaining 1/4 cup Pecorino Romano cheese evenly over the sandwiches.
  5. Place them under a broiler until hot and bubbly and lightly browned. Top each sandwich with two strips of crispy bacon, placed in the shape of an “X” and serve.
