Mix the sugar, flour and spice; toss to coat the apples. Pour mixture into an unbaked pie shell. Top with the caramel candy. Top with the crumbs.
Pie Crumbs: Mix everything in a small bowl. Work with hands to form crumbs. Put on top of pie before putting it in the oven.
Pie Crust: Mix shortening, butter, flour and salt with a pastry cutter. Add the cold water to the dough. Work with your hands to form a ball. Roll onto a flour-covered pastry cloth. Bake for 55 to 60 minutes at 375º.
