- 2 teaspoons oil
- 1/2 cup onions, chopped
- 1 garlic clove, crushed
- 1 cup mushrooms, sliced
- 1 cup pepperoni slices, cut into quarters
- 1/2 cup green peppers, chopped
- 2 (14 ounce) cans diced tomatoes or crushed tomatoes
- 1 cup beef broth
- 1 teaspoon basil
- 1 teaspoon oregano
Sauté onion and garlic in oil until soft. Add mushrooms, green pepper, and pepperoni. Cook over medium heat for approximately 5 minutes. Add remaining ingredients and bring to a boil. Reduce heat and simmer for another 10 minutes or so. Send thoroughly heated in thermos in school lunch.
