Pumpkin Nut Cookies with Frosting

Ingredients for Cookies:

  • 1-1/2 cup packed brown sugar
  • 1/2 cup margarine, softened
  • 1/2 cup shortening
  • 1 cup pumpkin puree
  • 1 egg
  • 2-1/3 cups flour
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 tsp. cinnamon
  • 2 cups chopped pecans

Ingredients for Frosting:

  • 3 cups powdered sugar
  • 1/4 cup margarine, softened
  • 1/4 tsp. ground cinnamon
  • 3-4 Tbsp. milk

Directions:

  1. Mix brown sugar, margarine and shortening in a large bowl. Stir in pumpkin and egg. Then stir in flour, baking powder, salt and cinnamon. Finally, stir in pecans.
  2. Drop by Tablespoonfuls on an ungreased cookie sheet 2 inches apart.
  3. Bake in a preheated 350° oven for 12-15 minutes. Remove from cookie sheet and cool completely.
  4. To make the frosting: Mix all frosting ingredients until smooth, starting with 2 Tablespoons of milk, adding more if necessary.
  5. To color the frosting orange, add drops of red and yellow food coloring.
  6. Frost the cookies and decorate with Candy Corn if desired.
