- 1 zucchini squash
- 1 yellow squash
- 1/8 cup diced onion
- 1 egg
- 2/3 cup self-rising flour
- Dash salt
- 1/8 teaspoon cayenne pepper
- 1/8 teaspoon black pepper
- 1/8 cup vegetable oil for frying
Directions
Use a cheese shredder to shred squashes. Press with paper towels to remove excess moisture. In a large bowl combine shredded squash, onion, egg, flour, salt and seasonings. Preheat oven to 375°. Heat oil in a cast iron skillet stove top. Form squash mixture into patties; fry each side until golden brown. Line a baking sheet with foil, place patties in oven to finish, 15 minutes. Serve hot and fresh with fried eggs for breakfast or as a side dish for supper.
