Award Winning Whoopie Pie

Ingredients:

  • 3 cups flour
  • 1 teaspoon salt
  • 1 ½ cups cocoa
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 cup butter
  • 2 cups sugar
  • 2 eggs
  • 2 cups buttermilk
  • 1 teaspoon vanilla

Ingredients for Filling:

  • 1 cup butter
  • 2 cups 10x sugar
  • 1 cup peanut butter
  • 1 teaspoon vanilla

Directions:

  1. Preheat oven to 350 degrees.
  2. Combine first five ingredients and set aside. Beat together butter and sugar. Add eggs one at a time, blending well after each addition. Add buttermilk and vanilla. Mix well.
  3. Add dry ingredients, blending until just combined.
  4. Grease cookie sheets. Scoop 1 ounce of batter and drop onto pans. Bake 12 minutes, then allow 5 minutes for cooling before removing from pans.
  5. Beat butter until smooth. Blend in sugar until well incorporated. Add vanilla and beat until light and fluffy.
  6. Assemble whoopie pies by placing heaping spoonful of filling on one side and sandwiching other side onto it.
