Pumpkin Pie Soup


  • 1 can (16-oz.) pumpkin, no salt or fat added
  • 1 can (12-oz.) evaporated skim milk
  • Granny Smith apples (sliced)


Place pumpkin and milk in blender. Blend until combined and pour into pot. Bring soup to simmer and cook for 30 minutes. Pour into bowls, and garnish with slices of washed Granny Smith apples. Serves 4.
