• 8 to 10 plum tomatoes
  • 1 red onion
  • 2 jalapeno peppers, chopped (optional)
  • 1/2 cucumber, peeled, seeded and diced
  • 1/4 teaspoon Tabasco sauce
  • 2 tablespoons cilantro, chopped
  • salt and pepper to taste


Place tomatoes on grill and cook, turning several times until slightly charred. Cool slightly and chop coarsely. Slice onion and grill 2 to 3 minutes on each side. Cool slightly and chop coarsely. In medium bowl, combine tomato with remaining ingredients. Mix well and set aside one hour to allow flavors to develop.
