Ingredients for the crust:
- 1 1/2 cups flour
- 1/2 cup butter
- 1/8 cup vegetable oil
- 1/8 cup milk
- pinch of salt
Ingredients for the filling:
- 1 cup light corn syrup
- 1 cup dark brown sugar, packed
- 3 eggs, lightly beaten
- 6 tbsp. unsalted butter, melted
- 1/2 tsp. salt
- 2 cups pecans
Directions:
- Preheat the oven to 350 F. Coat a 9-inch pie plate with nonstick cooking spray or butter.
- Place all filling ingredients in a bowl and stir to combine. Set the filling aside.
- For the crust, add flour to a bowl and add butter to flour a little at a time, and cream it together. Then add the rest of the ingredients and combine until dough forms.
- Roll out pie crust on a floured surface and place it in pie pan.
- Add filling to the crust and bake for 45 to 50 minutes.
- Remove from the oven and cool completely before serving.
- Serve plain or with ice cream or whipped cream. Enjoy!
