Peanut Butter Cookies

Ingredients:

  • 3 tbsp. butter
  • 2 tbsp. peanut butter
  • 1/2 cup brown sugar, packed
  • 1/4 cup sugar
  • 1 egg white
  • 1 tsp. vanilla
  • 1 cup all-purpose flour
  • 1/4 tsp. baking soda
  • 1/8 tsp. salt

Directions:

  1. In a large mixing bowl, cream butter, peanut butter and sugars. Add egg white; beat until blended. Beat in vanilla.
  2. In a separate bowl, combine flour, baking soda and salt; gradually add to the creamed mixture.
  3. Shape into 8-inch roll; wrap in plastic wrap. Refrigerate 2 hours or until firm.
  4. Unwrap and cut into slices, about 1/4-inch thick. Place 2 inches apart on baking sheets coated with nonstick cooking spray. Flatten with fork.
  5. Bake at 350 F for 6 to 8 minutes for chewy cookies or 8 to 10 minutes for crisp cookies.
  6. Place on cooling rack to cool completely.
