Smashed Breakfast Taco

Ingredients:

  • 1 lb. breakfast sausage
  • 8 6-inch flour tortillas
  • 1 tbsp. butter
  • 5 large eggs
  • Green peppers, onion, mushrooms, sauteed
  • 1 cup shredded cheddar cheese
  • 3 green onions, sliced
  • To taste hot sauce or salsa

Directions:

  1. Spread a layer of sausage evenly over tortillas, reaching the edges of each tortilla, and set aside.
  2. Melt butter in a nonstick skillet over medium heat. Add eggs, season with salt and pepper, and cook, stirring often until just set. Keep warm.
  3. Heat a griddle or large skillet over medium-high heat. Working in batches if necessary, place tortillas on the griddle meat side down. Cook, undisturbed until browned and cooked through, about 3 to 4 minutes. Flip and cook 30 seconds to 1 minute longer.
  4. Fold tacos in half and top each evenly with scrambled eggs, cheese, additional toppings and green onions. Drizzle with sauces and serve.
