Tortellini Meatball Soup

Ingredients:

  • 2 tsp. olive oil
  • 1 cup diced onion
  • 1 tbsp. minced garlic
  • 1 can stewed petite diced tomatoes
  • 1 can tomato sauce
  • 1 tbsp. Italian seasoning
  • 4 cups beef broth
  • 20-oz. package frozen mini meatballs, thawed
  • 20-oz. fresh cheese tortellini pasta
  • ½ cup shredded Parmesan cheese

Directions:

  1. In a large pot, heat olive oil over medium-high heat.
  2. Add the onion and cook until it’s starting to soften, about 2 to 3 minutes. Add the garlic and cook, stirring constantly, for 1 more minute. Stir in the diced tomatoes, tomato sauce, Italian seasoning, beef broth and meatballs. Bring to a boil; reduce the heat to low and simmer uncovered for 20 minutes.
  3. Add the tortellini and cook just until tender, about 5 to 7 more minutes. Stir in Parmesan cheese.
  4. Taste and add additional seasoning if necessary.
