Ingredients:
- 2 tsp. olive oil
- 1 cup diced onion
- 1 tbsp. minced garlic
- 1 can stewed petite diced tomatoes
- 1 can tomato sauce
- 1 tbsp. Italian seasoning
- 4 cups beef broth
- 20-oz. package frozen mini meatballs, thawed
- 20-oz. fresh cheese tortellini pasta
- ½ cup shredded Parmesan cheese
Directions:
- In a large pot, heat olive oil over medium-high heat.
- Add the onion and cook until it’s starting to soften, about 2 to 3 minutes. Add the garlic and cook, stirring constantly, for 1 more minute. Stir in the diced tomatoes, tomato sauce, Italian seasoning, beef broth and meatballs. Bring to a boil; reduce the heat to low and simmer uncovered for 20 minutes.
- Add the tortellini and cook just until tender, about 5 to 7 more minutes. Stir in Parmesan cheese.
- Taste and add additional seasoning if necessary.
