Ingredients:
- 1 cup all-purpose flour
- 1½ tsp. baking powder
- 1 tsp. parsley flakes
- ¾ tsp. salt
- ½ tsp. garlic powder
- ½ tsp. oregano
- ½ tsp. paprika
- ½ tsp. black pepper
- 1 cup shredded cheddar cheese
- 4 large eggs, beaten
- ½ cup melted butter
- 3 cups grated fresh zucchini
- ½ cup chopped onion
- 1 cup round buttery crackers, crushed
- 2½ tbsp. melted butter
Directions:
- Preheat oven to 350 F.
- Mix the flour, baking powder, seasonings and cheese in a large bowl.
- Add the eggs and melted butter and mix well.
- Wash and grate zucchini to make 3 cups. Drain any excess liquid. Stir the zucchini and chopped onion into the mixture.
- Grease a casserole dish or a 9-by9-inch pan, and pour the mixture into the dish.
- Mix the crushed crackers and melted butter and sprinkle over the top.
- Bake, uncovered, for 35 to 45 minutes or until set and the top is lightly browned. Let it rest for a few minutes and serve.
