Air Fryer Carrots

Ingredients:

  • 6 medium whole carrots
  • 1 tbsp. olive oil
  • ¼ tsp. coarse Kosher salt
  • ⅛ tsp. black pepper
  • 1 tbsp. butter, melted
  • 1½ tbsp. honey
  • 2 cloves garlic, minced

Directions:

  1. Preheat air fryer to 370 F for 5 minutes.
  2. Meanwhile, chop the carrots into 2-inch pieces on the diagonal. Cut pieces in half lengthwise or quarter if very large.
  3. Place carrots in a medium mixing bowl and toss with the olive oil, salt and pepper.
  4. Add the carrots to the preheated air fryer basket and shake them out into a single layer. Air fry for 12 minutes, shaking the basket to toss halfway through the cook time.
  5. While the carrots cook, wipe out the bowl that you used to season the carrots.
  6. In a small bowl, whisk together the melted butter, honey and minced garlic.
  7. Once the carrots have cooked for 12 minutes, return them to the mixing bowl. Pour the honey garlic butter mixture over the carrots and stir to coat.
  8. Return the carrots to the air fryer basket and cook for 6 to 8 more minutes, until tender and golden brown on the edges.
