Blueberry Pancakes



  • 1 cup flour
  • 1/2 teaspoon soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 whole wheat flour
  • 1 egg
  • 1 1/4 s milk
  • 2 tablespoons oil
  • 1 cup blueberries
  • oil for frying
  • butter topping
  • syrup topping


Sift flour, soda, baking powder and salt; add whole wheat flour and set aside. Mix egg and milk together in medium bowl and add oil. Slowly stir in flour mixture. Let batter stand at room temperature at least 20 minutes. Meanwhile, heat griddle or large frying pan with thin film of oil. Drop large tablespoons of batter on griddle and add a few blueberries to top of pancakes. When set flip over and cook other side. Serve with butter and syrup.
Note: You can use any prepared mix to make blueberry pancakes; add blueberries and cook pancakes in same manner described above.
