Boston Loaded Baked Beans

I like a large heavy cast iron pot so I can cook and bake all in one. You can also use a slow cooker for parties.

Ingredients:

  • 1 lb. bacon applewood smoked
  • 1 large yellow onion chopped
  • 1 small green pepper, chopped
  • 2 cloves garlic minced
  • 1 lb. ground beef
  • 1 lb. bulk sausage
  • 48 oz. baked beans, mostly drained
  • 32 oz. kidney beans, drained
  • 16 oz. cannellini beans, drained
  • 32 oz. black beans, drained
  • 1 cup brown sugar
  • 1/4 cup apple cider vinegar
  • 1 can tomato soup
  • 1/2 cup ketchup
  • 2 Tbsp. yellow mustard

Directions:

  1. Preheat oven to 275 F.
  2. Chop the uncooked bacon into small pieces. Over medium heat, brown the bacon in a cast iron pot.
  3. Remove bacon from pan and add the chopped onion and green pepper and brown for 5 to 6 minutes until translucent. Add the minced garlic and stir for one minute. Remove vegetables from pan and place with reserved bacon.
  4. Brown sausage and ground beef until they are cooked through, and then add bacon and vegetables back into pot. Add the drained beans and mix. Add the rest of the ingredients and combine.
  5. Cover and bake for 3 hours, stirring halfway through, or place in slow cooker and cook on high for 3 hours. When cooking time is done, remove from oven or shut off slow cooker.
  6. Remove lid, let beans stand for 20 minutes and stir before serving.
