- 1/4 cup flour
- 1/4 cup corn meal
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon paprika
- 2 egg whites
- 1/4 cup fat-free milk
- 4 flounder fillets (6 oz. each)
- 1 tablespoon grated Parmesan cheese
In shallow bowl, combine the flour, cornmeal, salt, paprika and pepper. In another shallow bowl, beat egg whites and milk. Coat fish with cornmeal mixture, then dip into egg white mixture. In 15x10x1 inch baking pan coated with nonstick cooking spray, arrange fish in a single layer. Sprinkle with Parmesan cheese. Bake, uncovered, at 425° for 8-10 minutes or until fish flakes easily with a fork. Serves 4.
