Ingredients:
- 1 can (13.5 oz.) of coconut milk
- 1 cup of chicken or vegetable broth
- 1 can (15 oz.) of black beans, drained and rinsed
- 1 can (20 oz.) of pineapple chunks
- 1/2 tsp. of salt
- 1 tsp. of butter
- 1 cup of rice
Directions:
- In a pot, add the coconut milk, chicken brother, the juice from the pineapple, salt and butter. Bring to a boil.
- Stir in the rice and reduce heat to a light simmer. Stir again, cover and turn the heat down low.
- Cook for 17 minutes, Stir in the black beans and pineapple to warm them while the rice continues to tenderize and asorb liquid. Once the rice is tender and liquid is absorbed, remove from the heat and let sit for 2 minutes to make sure all the liquid is absorbed.
- Take the lid off and let sit for two minutes before fluffing the rice mixture.
