Crockpot Pulled BBQ Chicken

Ingredients:

  • 3 lbs chicken thighs or breasts, (boneless, skinless)
  • 2 cups BBQ Sauce of your choice, 1/2 cup reserved.
  • 1/2 medium onion, finely chopped
  • 1 Tbsp olive oil
  • 1 Tbsp Worcestershire sauce
  • 2 Tbsp brown sugar

Directions:

  1. Prepare your slow cooker with a line or by spraying with cooking spray.
  2. Stir together all sauce ingredients in the slow cooker.
  3. Add chicken and turn to coat. Cover and cook on high for 2 to 3 hours or for 6 to 7 hours on low. Chicken is done when cooked through to an internal temperature of 165˚F and is easy to shred.
  4. Remove chicken to a cutting board and shred each breast using two forks. Place shredded chicken back in the crock pot add the reserved BBQ sauce and stir with the sauce in the pot to coat evently.
  5. Serve on a toasted bun, baked potatoe, or on nachos.
