Cheeseburger Muffins

Ingredients:

  • 1 small onion, chopped
  • 1/2 lb. ground beef
  • 2 1/2 cups flour
  • 1 Tbsp. sugar
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 3/4 cup ketchup
  • 3/4 cup milk
  • 1/2 cup butter, melted
  • 2 eggs
  • 1 tsp. yellow mustard
  • 1 cup cheddar cheese, shredded
  • nonstick spray
  • 2 Tbsp. butter

Directions:

  1. Finely chop up onion and brown in a skillet with broken-up ground beef. Drain.
  2. In a large bowl, combine flour, sugar, baking powder and salt. In a smaller, separate bowl, combine ketchup, milk, melted butter, eggs and yellow mustard.
  3. Stir wet ingredients into the dry ingredients. Add cheddar cheese to mixture and mix well.
  4. Add in drained, browned ground beef. Mix well.
  5. Spray muffin pans with non-stick spray. Melt 2 tablespoons butter and grease the tins for additional flavor.
  6. Fill cups about 3/4 full and bake in a preheated 425 F oven. For minis, bake about 12 minutes, and for full-size muffins, bake about 20 minutes. Check with a toothpick by inserting into the center to make sure they are fully baked.
  7. Cool on a wire rack. This recipe makes about 48 minis or 12 to 18 regular muffins.
