Ingredients:
- 1 small onion, chopped
- 1/2 lb. ground beef
- 2 1/2 cups flour
- 1 Tbsp. sugar
- 2 tsp. baking powder
- 1 tsp. salt
- 3/4 cup ketchup
- 3/4 cup milk
- 1/2 cup butter, melted
- 2 eggs
- 1 tsp. yellow mustard
- 1 cup cheddar cheese, shredded
- nonstick spray
- 2 Tbsp. butter
Directions:
- Finely chop up onion and brown in a skillet with broken-up ground beef. Drain.
- In a large bowl, combine flour, sugar, baking powder and salt. In a smaller, separate bowl, combine ketchup, milk, melted butter, eggs and yellow mustard.
- Stir wet ingredients into the dry ingredients. Add cheddar cheese to mixture and mix well.
- Add in drained, browned ground beef. Mix well.
- Spray muffin pans with non-stick spray. Melt 2 tablespoons butter and grease the tins for additional flavor.
- Fill cups about 3/4 full and bake in a preheated 425 F oven. For minis, bake about 12 minutes, and for full-size muffins, bake about 20 minutes. Check with a toothpick by inserting into the center to make sure they are fully baked.
- Cool on a wire rack. This recipe makes about 48 minis or 12 to 18 regular muffins.
