Egg And Onion Pie

Ingredients

  • 6 hard-cooked eggs, peeled and sliced
  • 3 onions, 3 inches in diameter, peeled and sliced 1/4 inch thick
  • 1/3 butter
  • 1/4 all-purpose flour
  • 1 1/4 s milk
  • 1/4 grated mild American cheese
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper

Directions

Using 1 tablespoon of the butter, saute onion slices until limp and transparent. Spread onion over bottom of lightly buttered casserole. Distribute egg slices over top of onions; set aside.
Melt remainder of butter in saucepan. Stir in flour; mix until smooth. Add milk and cook over low heat, stirring constantly, until mixture has thickened. Stir in cheese, salt and pepper. Pour sauce over eggs
and onions.
Place in 350° oven 15 minutes or
until top has turned golden brown. Serve piping hot.
