Ingredients:
- 1 tsp. garlic powder
- 1 tsp. salt
- 1 tsp. Old Bay
- ½ tsp. chili powder
- ½ tsp. onion powder
- ½ tsp. black pepper
- 6 fillets of white fish (fresh or frozen)
- 2 cups corn flakes
- 1 cup flour + pinch of salt and pepper
- 2 eggs (whisked)
- Cooking spray
Directions:
- If using frozen fish, thaw and pat dry with a towel. Depending on the size of the fish, cut into smaller pieces as desired.
- Mix the dry rub ingredients together and sprinkle over both sides of the fish and rub in with your hands.
- Prepare a dredging station using three bowls. Add the cornflakes to one bowl and gently crush. Combine flour, pinch of salt and pepper to another bowl and stir. Add the whisked eggs to the third bowl.
- Preheat air fryer or oven to 400 F.
- Using two hands, keep one hand for the dry ingredients and one for the wet. First dip the fish into the flour, then the egg, then the cornflakes. Use your hands to gently push down and pack on the cornflakes to ensure they stick well.
- Spray both sides of the fish with cooking spray. Place pieces in an air fryer or large cookie sheet with a wire rack on top. Cook for approximately 15 minutes, flipping once halfway through for air fryer or conventional oven.
