Its-It Ice Cream Sandwich

Ingredients:

• One Recipe for Old Fashioned Oatmeal Cookies
• One Recipe of Brown Butter Ice Cream
• 2 bags of Dark Chocolate Chips

Directions:

1. Make and completely cook the Oatmeal Cookies as directed in the recipe above.
2. Make and completely freeze the recipe of Brown Butter Ice Cream as directed in the recipe above
3. To Assembly: Place on scoop of ice cream on the back of a cookie. Top with a second cookie smashing it down to evenly spread the ice cream out. Place on a parchment lined cookie sheet and repeat with the remaining cookies.
4. Place the sheet pan of ice cream sandwiches in the freezer for 1 hour.
5. Just before removing the ice cream sandwiches from the oven, in a microwave safe bowl, place the dark chocolate chips in a microwave save bowl and microwave for 1 minute. Stir and if needed, continue microwaving in 30 second intervals until they are completely melted and smaooth.
6. Dip each ice cream sandwich in the melted chocolate and place back onto the parchment paper to set. Once all of the ice cream sandwiches have been dipped, place the tray back in the freezer until ready to serve.
