Loaded Grilled Potato Chips

Ingredients:

  • 4 large russet potatoes, scrubbed
  • 8 ounces bacon, chopped in pieces
  • 2 Tbsp. butter
  • 8 ounces cheddar cheese, shredded
  • 1/2 cup minced fresh scallions
  • 1/2 cup sour cream
  • Kosher salt
  • Freshly ground black pepper

Directions:

  1. Preheat your griddle to medium high heat.
  2. While it heats up, slice the potatoes into 1/4 inch slices.
  3. Cook bacon on the griddle and remove most of the grease.
  4. Add potatoes to the cooktop and spread evenly with a spatula. Cook the potato slices on the grill for 5 to 6 minutes per side. Season both sides with kosher salt and pepper. Add butter to griddle and coat potatoes.
  5. Turn the grill off, top each potato slice with cheese and bacon crumbles. Once melted, remove from the griddle.
  6. Serve with sour cream and scallions.
