Mexican Casserole

Ingredients:

  • 2 8.5 oz. boxes Jiffy corn muffin mix
  • 16 oz. can cream style canned corn
  • 2 lbs. ground beef
  • 4 oz. can mushrooms, drained well
  • 8 oz. jar taco sauce
  • 1 lb. mozzarella cheese
  • 1 small can black olives, chopped

Directions:

  1. Prepare corn muffin mix according to directions. Add canned corn.
  2. Line the bottom of a 9-by-13 dish with 1/2 of the corn mixture. Set aside.
  3. In a medium skillet, brown ground beef, drain. Add drained mushrooms, taco sauce and olives. Simmer for 15 minutes.
  4. Pour over first layer of corn muffin mixture. Top with mozzarella cheese. Then pour the other half of corn muffin mixture on top.
  5. Bake at 350 F for 50 minutes.
