Mikey’s Air Fryer Corned Beef

Easy to prepare and delicious when sliced up and made into Rueben sandwiches.


  • 1 2-3 lb. corned beef roast, with seasoning packet
  • 1/4 cup of mustard, stone ground, dijon or yellow
  • Aluminum foil
  • Non-stick cooking spray


  1. Unwrap and rinse your corned beef roast, reserving the seasoning packet for later.
  2. Cover the entire corned beef roast in half of the mustard. Use a basting brush to make sure it is evenly covered.
  3. Place the corned beef in the center of two pieces of aluminum foil with the fat cap side facing up.
  4. Sprinkle the seasoning packet on the top of the fat cap.
  5. Wrap tightly in foil and place in your air fryer basket making sure that is placed fat cap side up.
  6. Cook at 370° for 60 minutes.
  7. At the 60 minute mark, open the foil and baste the corned beef with the remaining mustard.
  8. Wrap the foil around the roast again, and continue air frying for another 45-60 minutes depending on the size of your corned beef.
  9. Let stand for 15 minutes before slicing across the grain.
