Pistachio Cake

Ingredients for the Cake:

  • 1 box white cake mix
  • 3.4-oz. pkg. instant pistachio pudding mix
  • 1 cup oil
  • 3 eggs
  • 1/2 cup chopped nuts
  • 1 cup club soda
  • 1/4 cup chopped nuts , for garnish

Ingredients for the Frosting:

  • 2 envelopes whipped topping mix
  • 1-1/2 cups cold milk
  • 3.4-oz. pkg. instant pistachio pudding mix

Directions for the Cake:

  1. Combine all cake ingredients, blend for 4 minutes and pour batter into a greased and floured 10″ tube pan.
  2. Bake at 350° for 45-50 minutes or until cake passes the toothpick test. Cool in pan for 10 minutes, then remove and cool completely on a wire rack.

Directions for the Frosting:

  1. Combine whipped topping mix and milk together. Blend until soft peaks form.
  2. Add pudding mix, and blend until fluffy.
  3. Frost cake and garnish with chopped nuts. Refrigerate until ready to serve.
