Spinach Ricotta Calzones


  • 15 oz. container ricotta cheese
  • 2 eggs
  • 2 Tbsp. dried Italian seasoning
  • 3 cups shredded mozzarella cheese
  • 1 cup freshly grated Parmesan cheese
  • 10 oz. package frozen chopped spinach, thawed and squeezed dry
  • To taste salt and pepper
  • 32 oz. package frozen white bread dough, thawed


  1. Preheat oven to 400 F.
  2. In a large bowl, mix together the ricotta cheese, eggs, Italian seasoning, mozzarella cheese, parmesan cheese and spinach. Set aside.
  3. Divide the bread dough into eight pieces and roll each piece out to about an 8-inch circle.
  4. Spoon about 1/2 cup of the ricotta filling onto each circle, fold over and seal the edges. Place on a greased cookie sheet.
  5. Bake for 30 minutes in the preheated oven or until nicely browned on top and bottom.
