Baked Pumpkin

Ingredients: 1 pumpkin (small, peeled and cut into cubes) 1 cup sugar 1 teaspoon salt 1 teaspoon cinnamon Directions: Preheat oven to 325 degrees Fahrenheit. Place pumpkin cubes in a baking dish and sprinkle with sugar and salt. Cover pan with foil and bake until soft. Sprinkle with cinnamon.

Ingredients: 1 can  (15 oz.) pumpkin 1 pkg.  (3.4 oz.) vanilla flavor instant pudding 1 tsp.  pumpkin pie spice 1 tub  (8 oz.) whipped topping, thawed Directions: Mix pumpkin, dry pudding mix and spice in large bowl with whisk until blended. Stir in whipped topping. Refrigerate 1 hour.
