Thanksgiving Sweet Potatoes

Patsy Schmuki, of Navarre, Ohio, shares a recipe for Thanksgiving Sweet Potatoes with us. She says you can use canned yams, but if you do, do not add the brown sugar to the potato mixture — it will be too sweet.

Ingredients

  • 3 cups sweet potatoes, peeled, boiled and mashed
  • 1 cup brown sugar
  • 1/2 cup butter, melted
  • 2 egg
  • 1 teaspoon vanilla
  • Topping:
  • 1 cup brown sugar
  • 1 cup chopped pecans
  • 1/2 cup flour
  • 1/2 cup butter, room temperature

Directions

After potatoes are mashed, add brown sugar, butter, eggs and vanilla. Mix well. In a separate bowl, mix topping and pour over sweet potato mixture. Do not mix the top into the potato mixture. Bake covered at 350° for 30 minutes.
