Ingredients:
- 3 cups cooked basmati rice
- 1 large English cucumber, diced
- 1 pint grape tomatoes halved
- ½ red onion, finely diced
- ¼ cup pitted Kalamata olives roughly chopped
- ¼ cup fresh parsley
Ingredients for the dressing:
- ¼ cup olive oil
- 3 Tbsp. lemon juice
- 1 tsp. dijon mustard
- 1 tsp. oregano
- ½ tsp. cumin
- ½ tsp. salt
- ½ tsp. black pepper
Directions:
- Place the cooked rice, cucumbers, tomatoes, red onion, kalamata olives and parsley in a large bowl.
- In a small bowl or jar, whisk together the dressing ingredients.
- When ready to serve, pour the dressing over the salad and gently toss to combine. Add shredded chicken for a heartier meal.
