Balsamic Chicken

Ingredients:

  • 1/4 cup balsamic vinegar
  • 3 tbsp. honey
  • 2 tsp. dried basil leaves
  • 1 tsp. salt
  • 1/2 tsp. freshly ground black pepper
  • 1-1.5 lbs. chicken drumsticks

Directions:

  1. In a large plastic resealable storage bag, combine the balsamic vinegar, honey, basil, salt and pepper. Mix well to combine. Add the chicken, toss to coat, and then refrigerate for at least 1 hour and up to 6 hours.
  2. Preheat the oven to 400 F, and line a sheet pan with parchment paper. Remove the chicken from the marinade, and arrange it so it is evenly spaced on the sheet pan. Discard the marinade.
  3. Bake for 35 to 40 minutes, turning once halfway through or until the temperature of the thickest part of the chicken measures 165 F.
