Gnocchi Alfredo with Peas

Ingredients:

  • To taste kosher salt
  • 1 stick butter
  • 1 cup heavy cream
  • 2 17.5-oz. packages prepared gnocchi
  • 16 oz. bag frozen peas
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup chopped fresh chives
  • 1 tsp. grated lemon zest
  • 1/4 tsp. black pepper
  • 1 cup grated Parmesan cheese, plus more for serving

Directions:

  1. Bring a large pot of salted water to a boil.
  2. Melt the butter in a large skillet over medium-low heat. Add the heavy cream, bring to a simmer and cook gently until the sauce comes together and reduces slightly, 4 to 5 minutes.
  3. Add the gnocchi and peas to the boiling water and cook according to the gnocchi package directions, about 4 minutes. Reserve 1 cup of the cooking water and then drain.
  4. Add the gnocchi and peas to the cream sauce along with the parsley, chives, lemon zest and pepper. Toss to combine.
  5. Add 1⁄2 cup of the reserved cooking water and return to a simmer. Remove the skillet from the heat. Sprinkle with the Parmesan and toss to combine. Add some or all of the remaining cooking water if the sauce is too thick.
  6. Serve with more Parmesan.
