Gnocchi Alfredo with Peas
Ingredients:
- To taste kosher salt
- 1 stick butter
- 1 cup heavy cream
- 2 17.5-oz. packages prepared gnocchi
- 16 oz. bag frozen peas
- 1/2 cup fresh parsley, chopped
- 1/4 cup chopped fresh chives
- 1 tsp. grated lemon zest
- 1/4 tsp. black pepper
- 1 cup grated Parmesan cheese, plus more for serving
Directions:
- Bring a large pot of salted water to a boil.
- Melt the butter in a large skillet over medium-low heat. Add the heavy cream, bring to a simmer and cook gently until the sauce comes together and reduces slightly, 4 to 5 minutes.
- Add the gnocchi and peas to the boiling water and cook according to the gnocchi package directions, about 4 minutes. Reserve 1 cup of the cooking water and then drain.
- Add the gnocchi and peas to the cream sauce along with the parsley, chives, lemon zest and pepper. Toss to combine.
- Add 1⁄2 cup of the reserved cooking water and return to a simmer. Remove the skillet from the heat. Sprinkle with the Parmesan and toss to combine. Add some or all of the remaining cooking water if the sauce is too thick.
- Serve with more Parmesan.
