Apple Loaf

Ingredients:

  • 2 cups all-purpose flour
  • 1 tsp. baking powder
  • ½ tsp. baking soda
  • ½ tsp. salt
  • ½ cup chopped walnuts
  • 1 cup white sugar
  • ½ cup butter, softened
  • 2 large eggs
  • 1 tsp. vanilla extract
  • 1 cup apples, peeled, cored and shredded

Directions:

  2. Preheat oven to 350 F. Grease a 9-by-5-inch loaf pan.
  3. Mix flour, baking powder, baking soda and salt together in a medium bowl. Stir in walnuts.
  4. In a large bowl, beat sugar, butter and one egg until smooth. Beat in remaining egg and then vanilla.
  5. Stir in shredded apples and then stir in flour mixture just until moistened. Spread into the prepared pan.
  6. Bake in the preheated oven until a toothpick inserted in the center comes out clean, 50 to 60 minutes.
  7. Let stand for 10 minutes, then remove from the pan and finish cooling on a wire rack.
