Bacon Cheese Fries

Ingredients:

  • 2 large russet potatoes, peeled and cut into 1⁄4″ fries
  • 1 Tbsp. olive oil
  • 1 tsp. chili powder
  • 1⁄4 tsp. smoked paprika (optional)
  • Salt and black pepper to taste
  • 1 cup shredded Pepper Jack cheese
  • 4  slices bacon, cooked and crumbled
  • 5  scallions, chopped
  • sliced jalapeños, from jar

Directions:

  1. Preheat the oven to 425°F.
  2. Toss the potatoes with the olive oil, chili powder, smoked paprika (if using), and salt and pepper.
  3. Spread out on a rimmed baking sheet and bake for about 20 minutes, until deep brown and crispy on the outside.
  4. Top with the cheese, bacon, and scallions, and return to the oven.
  5. Bake until the cheese is fully melted and beginning to brown.
  6. Garnish with jalapeños.
