Blueberry French Toast Bites

A perfect treat for Mother’s Day on May 11!

Ingredients:

  • 1 cup blueberries
  • 2 Tbsp. sugar
  • 2 Tbsp. water
  • 6 sweetened dinner rolls
  • 2 eggs
  • ¼ cup sugar
  • ¼ tsp. cinnamon
  • 2 Tbsp. butter

Directions:

  1. Place the blueberries, sugar and water in a saucepot. Cook over medium-high heat for 5 minutes. Reduce heat to medium and cook down for 5 more minutes. Place in a plastic bowl and refrigerate to cool. Place the cooled blueberry filling in a piping bag.
  2. Whip two eggs in a bowl. Dip a roll in the egg wash. Combine ¼ cup sugar and cinnamon in a bowl. Dip the roll in the sugar.
  3. Poke your finger in the side of the roll. Then, pipe blueberry filling into the hole. Repeat until all rolls are filled.
  4. Place butter in a 6-by-10-inch pan and melt in a 400 F oven. Place the rolls on their sides in the pan.
  5. Bake uncovered for 10 minutes. Serve warm.
