Blueberry Nut Bread


  • 1 1/2 s unbleached white flour
  • 1 cup sugar
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 whole wheat flour
  • 1/4 margarine
  • 1 egg, well beaten
  • 3/4 orange juice
  • 1 teaspoon grated or dried orange peel
  • 1 cup blueberries
  • 1/2 chopped walnuts


Sift together first 5 ingredients and put in large bowl; add whole wheat flour. Cut margarine into flour mixture. In small bowl, combine egg, orange juice and orange peel. Add to dry ingredients and mix until just moistened. Fold in berries and walnuts. Pour into greased and floured 9 by 5-inch loaf pan and bake at 350° 1 hour. Cool before removing from pan; wrap in foil and store overnight before cutting. Makes 1 loaf.
