Caramelized Peaches with Ice Cream



  • 4 tablespoons unsalted butter, cut into pieces
  • 3/4 cup sugar
  • 1 tsp. vanilla extract
  • 6 peaches, unpeeled
  • 1 pint vanilla ice cream
  • Directions

    Heat oven to 400°. In a 9-by-13-inch baking dish, combine butter, sugar, vanilla, and 1/4 cup water. Place dish in the heating oven until butter melts. Remove from oven and stir to combine. Cut each peach in half and remove pits. Arrange peach halves in dish cut-side down. Roast until peaches are tender, about 20 minutes. If desired, slip peach skins off and discard. Divide warm peach halves among 6 bowls cut-side up, spoon pan juices over the top, and serve with a scoop (or two) of ice cream.
