Chicken Caesar Lettuce Wraps


  • 12 leaves butter lettuce
  • 2 cups shredded rotisserie chicken
  • 1/2 – 3/4 cup Greek yogurt Caesar dressing
  • 6 Tbsp. grated parmesan cheese
  • 1 cup croutons
  • To taste cracked black pepper
  • 1/2 cup chopped green onion
  • 3 Anchovy filets, chopped, optional
  • 1 hard-boiled egg, chopped, optional


  1. Layer two leaves on top of each other to make each lettuce wrap, making a total of six wraps.
  2. Add 1/3 cup rotisserie chicken to each wrap and top with 1 to 2 tablespoons of Greek yogurt Caesar dressing. Sprinkle 1 tablespoon of finely grated parmesan onto the chicken and Caesar.
  3. Divide the croutons, anchovies and egg amongst the wraps, and then top each with freshly cracked black pepper and chopped green onion to fit your taste.
