    Coffee Drop Cookies
    Yield: Makes 3 dozen.

    Ingredients:

    • 1/2 cup shortening
    • 1 cup sugar
    • 1 egg, beaten
    • 1 tsp. vanilla extract
    • 2 cups all-purpose flour
    • 1 tsp. baking powder
    • 1/2 tsp. baking soda
    • 1 tsp. ground cloves
    • 1/2 tsp. cinnamon
    • 1/4 tsp. salt
    • 3/4 cup cold brewed coffee
    • 1/2 cup chopped walnuts
    • Optional: 1/2 cup raisins

    Directions:

    1. In a large bowl, blend together shortening and sugar. Add egg and vanilla; stir well. Add flour, baking powder, baking soda, spices and salt; mix well. Slowly stir in coffee. Fold in nuts and raisins (if using).
    2. Drop by tablespoonfuls onto well greased baking sheets.
    3. Bake at 400°F for 15 minutes. Cool on wire racks.
