Copycat Zuppa Tuscano

Ingredients:

  • 1 tablespoon olive oil
  • 2 lb. ground mild Italian pork sausage
  • 2 onion, finely diced
  • 6 cloves garlic, minced
  • 4 medium russet potatoes, peeled and cubed
  • 12 cups chicken broth
  • 4-5 cups of baby spinach
  • 1 1/2 cups heavy cream
  • salt and pepper to taste

Directions:

  1. Heat the oil in a large pot over medium high heat. Brown the sausage until fully cooked.
  2. Add the onions and garlic to the sausage. Sauté for 5-7 minutes until soft and fragrant. FYI your house will smell AMAZING.
  3. Add the potatoes and the broth. Simmer for 7-10 minutes, until the potatoes are tender. (Be careful not to let it go for too long, because the potatoes will start to get really soft.)
  4. Add the spinach and heavy cream. Simmer for 5 minutes until kale has wilted.
  5. Season with salt and pepper and serve.
