- 2 tablespoons margarine
- 2 2/3 s Golden Delicious apples, peeled, cored and sliced
- 4 tablespoons dark brown sugar
- 1/2 teaspoon pumpkin-pie spice
- 1/2 dates, chopped
- 4 Buckwheat Pancakes
- 2 tablespoons honey (or syrup)
Preheat oven to 350°.
Melt margarine in medium saucepan. Add apples, sugar, pumpkin-pie spice and dates. Cook over low heat 10 to 15 minutes, stirring frequently, until apples are soft.
Lay pancakes on flat surface. Spoon apple mixture onto one side of each pancake. Roll up loosely and arrange on baking tray. Warm honey; spoon it over pancakes to glaze. Bake in preheated oven until heated through, about 15 minutes.
