- 1 zucchini, with skin, cut into 1″ cubes
- 1 medium tomato, chopped into 1″ chunks
- 1/4 yellow bell pepper, diced
- 1 onion, diced
- 1/2 tablespoon low-fat mayonnaise
Combine first 4 ingredients in small saucepan. Cook on MEDIUM-LOW heat until vegetables are tender, about 20 minutes, stirring occasionally. Remove from stove top and mix in mayonnaise. Add salt and pepper to taste (optional).
